Course objectives

TGS-2023035870 (Non-WSQ)This 3-day module is designed to be part of a Hawker Development Programme that equips Hawker wanabes with strong foundational culinary skills to dish out good food in their quest for a successful Hawker business. Participants will learn fundamental culinary theory and skills, applying basic cooking techniques such as dry heat cooking, moist heat cooking, and combination cooking to produce popular hawker dishes. At the end of this module, participants will be able to:

- acquire knowledge of culinary fundamentals theory

- acquire skills in dry heat cooking, moist heat cooking and combination cooking method

- apply cooking techniques into local hawker dishes

Course description

The most critical prerequisite of a hawker is fundamental culinary skills. Happy tummy keeps customers coming back for more. This programme aims to equip Hawker wannabes with the skills to prepare popular hawker dishes and basic sauces - Chilli paste base/ rempah, Nasi Lemak and its various condiments, Chicken Rice and its accompanying condiments, Hokkien Mee, and Char Kway Teow.
