About this course

Course objectives

This module is designed to provide learners with a comprehensive understanding of the various components that constitute a Japanese Tea-time dessert. Learners will also be equipped with the abilities and knowledge to prepare the ingredients as well as technical skills to the perfect egg white peak required to achieve layers in cakes.

At the end of the lesson, learners will be able to:

• Whip egg white to the perfect peak consistency

• Control and adjust the baking temperature for the Japanese Tea-time

bakes

• Prepare the filling component for the cake to the correct texture

• Assemble the finished product efficiently

• Produce bakery products according to industry practice

Course description

Japanese Tea-time treats have increasingly gained their popularity in the market due to their fine arts of production and availability of ingredients. This course offers the theoretical knowledge and trains learners to compose and produce Japanese Tea-time treats. Learners will gain a better understanding and attain the knowledge in the principles of making Japanese Tea-time favourites. The food and beverage industry plays an important role in contributing to the tourism industry. Given that this industry is wide with a diverse market, it requires its personnel to have good product knowledge and versatility in producing varying types of cuisines to meet diners' needs.At the end of the lesson, learners will attain knowledge and competencies related to the preparation of Japanese Tea-time treats. They will also possess the ability to prepare Japanese Tea-time treats such as Japanese Cheesecake and Matcha Red Bean Swiss Roll.

Learners will bring home these freshly baked cakes to enjoy with their family.
